Tasty Tuesdays ~ Caldo Verde

My name is Melissa and I am one of the three chefs at The Mutts Kitchen. This is my first time doing a blog for Chic Mamma. Actually, this is my first time ever writing a blog.

I am really excited to be bringing to you my Caldo Verde (Green Soup) recipe. Caldo Verde was the first traditional Portuguese food my mother taught me to make and in my opinion, it is truly a bowl of Portuguese comfort. Just the sight or smell of it cooking makes my mouth water. Remember to make a large batch as Caldo Verde tastes even better the next day.

This week in The Mutts Kitchen we will be focusing on Italian dishes. I can not wait to hear the recipe for Denise’s basic tomato sauce and other yummy dishes that will be served in The Mutts Kitchen this week.

CALDO VERDE

Caldo Verde Final Pic

Ingredients:

2 tsp garlic, chopped
1 medium onion, chopped
4 large potatoes, chopped
12 cups water
1 bunch collard greens, thinly chopped with large vein removed*
1 Portuguese sausage, thinly sliced
¼ cup extra virgin olive oil
salt and pepper to taste

Directions:

1. In a large soup pot, add 8 cups of water, garlic, potatoes and onions. On high, bring the mixture to a boil and boil for 20 minutes.
2. Remove the large pieces from the liquid and blend until smooth.
3. Return the puree to the liquid and stir till well mixed. Add the collard greens, sausage, oil olive and the remaining 4 cups of water to the pot.
4. Bring back up to a boil and boil for 20 minutes.
5. Add salt and pepper to taste.
*To prepare the collard greens follow these steps:
1. Wash, rinse and dry the leaves.
2. Remove the vein and stem.
3. Stack a few leaves and roll them tightly.
4. Slice thinly.

Store extra collard greens in a air tight Ziplock bag and freeze up to 12 months.
