Tasty Tuesdays ~ Apple & Oats Meal

Do you have left over applesauce from your recent trip to the orchard? Do you find store bought instant oatmeal bland, boring and high in sodium?

Try this quick and easy recipe and you are sure to satisfy your families early morning hunger. Oatmeal is not only filling but high in fibre. The combination of fresh yogurt, shredded apples and sprinkled cinnamon is so tart and refreshing.

APPLE & OATS MEAL

Serves: 4-5
Prep time: 10 minutes
Total time: 15 minutes

Ingredients:

2 1/4 cup Quick Oats
1 tsp salt
2 1/4 cup milk; Whole Cow’s, Almond, Rice or Goat’s Milk
2 1/4 cup Mommy Please Applesauce (recipe found in the Soups & Sauces Album)
2 tsp brown sugar (optional)
1 cup toasted walnuts, chopped
4 tbsp Vanilla Favoured Greek Yogurt
1/2 apple, shredded
1/2 apple, sliced

Directions:

1. In a saucepan; heat milk, applesauce, sugar and salt, covered to a boil.

2. Add oats and stir. Return to a boil.

3. Reduce heat to low and simmer. Cook for 5 minutes while stirring. *adding more milk for a thinner consistency.

4.Add shredded apple to the yogurt and mix.

5. Remove pan from heat.

6. Serve with a dollop of yogurt, chopped walnuts, sliced apples and sprinkled cinnamon.
