Tasty Tuesdays ~ Cheesy Chicken & Ham

Hello Chic Mammas,

Today Melissa from The Mutts Kitchen is serving up cheesy chicken and ham.

Once again I am bringing you a low carb diabetic friendly alternative. Usually Chicken Cordon Bleu is breaded on the outside, which creates unnecessary carbs. I like to think of this as an inside out Chicken Cordon Bleu.

This recipe has my almost 3 year old begging for seconds and thirds. Stay tuned for more yummy recipes coming to The Mutts Kitchen this month.

CHEESY CHICKEN & HAM

Ingredients:

4 chicken breast, boneless and skinless
1 tbsp olive oil
1 1/2 tbsp seasoned bread crumbs
2-3 slices black forest ham, cut into rectangles
6-8 slices marble cheese, cut into rectangles
salt and pepper, to taste

Directions:

Preheat oven to 375

1. Remove visible fat from chicken and place 4 slits on the top. Slits should go about 3/4th of the way through the chicken.
2. Place chicken in a Pyrex dish and drizzle with olive oil and rub all over the chicken.
3. In each slit of the chicken place a rectangle of cheese and 2 rectangles of ham.
4. Sprinkle with salt and pepper and top with the bread crumbs.
5. Place in the oven for 35 minutes.
